Recipe of the Week: Foil Pack Potatoes
Finally I decided to go with these foil pack potatoes. Sorry that the photo's not that great, but it is a delicious side item that you can bake in the oven or on the grill. The recipe I used called for taco seasoning, but I used chili powder and a little salt and pepper instead. But you could use any seasonings or toppings you like.

Directions: Cut potatoes into thin slices or cubes. Place slices from one potato (or 2 small potatoes) on a piece of foil. Sprinkle with chili powder and cheddar cheese. Bring up foil sides and fold down to seal the packet Bake at 400 degrees for about 30 minutes. Serve beside your favorite dish. (Optional - Top with sour cream and other toppings when serving.)

That sounds good. I would boil mine first. My potatoes never get as soft as we like them in recipes I try.

I love these! I've made them before...the only thing I changed was I sprayed the aluminum foil w/ non-stick spray to keep the cheese from sticking! :)

Great idea, I do something similar in my crock pot but I don't boil first just 8 hours on low cooks them perfectly

I've tried this with a piece of fish and some carrots added. It's a good, healthy and easy meal. The potatoes and carrots take so long to get soft that I usually cook them a bit first.

I make these too. I slice my potatoes on the thin side, add diced onion, and then salt, pepper, garlic powder and paprika, oh, parsley too. Yummy!! I often put them on the grill

I do something similar to this but I don't boil my potatoes beforehand. I just make them into fries and then put them in foil pouches with 2tbsp. butter or margarine and then sprinkle them with either cajun seasoning or garlic powder and parmesan cheese. :) I cook on the grill for 45-1 hour on medium to low heat. Yummy! :)

It looks delicious! We used to grill a lot and would throw veggies, potatoes, garlic, butter, salt and pepper in aluminum foil and put it on the grill. We live in apartments now and grills aren't allowed. I had never thought of doing the same thing in the oven! We'll have to try it out. Thanks!
