Coconut Pecan Cookies
Several weeks ago I shared these pudding cookies, which I first saw over at Chef in Training. You know I love to make different versions and variations of the same recipe, so today I've got Coconut Pecan version to share with you!
Recipe for Coconut Pecan Cookies:
Ingredients:
1 1/2 sticks butter (3/4 cup)
3/4 cup brown sugar
1/4 cup sugar
1
(3.4 oz) package instant coconut cream pudding
1 tsp coconut flavoring (or use vanilla if you don't have coconut)
2 eggs
1 tsp baking soda
2 1/4 cups flour
1/2 cup pecans
1/2 cup pecans
1 cup shredded coconut
Directions: Preheat oven to 350 F. Mix flour and baking soda together. Set aside.
In a large bowl, cream butter and sugars together. Add in pudding package and beat until well blended. Add eggs and coconut flavoring. Add flour mixture slowly until well incorporated. Add chocolate chips or other add-in.
Roll into 1 inch balls and place on greased baking sheet. Bake at 350 F for 8-12 minutes.

I love these cookies! What I really like is the various coconut flavorings for those that don't like the shredded kind. I'll make these without the shredded coconut bc my hubby and I really don't eat it. Thx for the recipe!
