Berry Cheesecake
Recipe for Berry Cheesecake:
Ingredients:
8 sheets phyllo dough (14 inches x 9 inches)
6 tablespoons butter, melted
2 packages (8 ounces each) cream cheese, softened
1/2 cup sugar
1 teaspoon vanilla extract
2 eggs, lightly beaten
2 cups fresh or frozen blueberries
1/2 cup strawberry jelly
1 cup whipped topping
Sliced fresh strawberries and additional blueberries, optional

Yum! CHeesecakes are a fave around here, although I admit that lately I haven't made any as they are too tempting to keep around. LOL! I've never tried phyllo dough for the crust before. That sounds like a fun way to change up a normal graham crust. :D
