Pudding Cookies
One of the great things about hosting my linky party is that it gives me a chance to get recipes and ideas that I might not have otherwise found through regular blog surfing or hopping through links at other parties. One blog that always shows up to the party with some standout eats and treats is Chef in Training. Back in July, they linked up these Pudding Cookies, which I made almost immediately. And they were just scrumptious!
Recipe for Pudding Cookies:
Ingredients:
1 1/2 sticks butter (3/4 cup)
3/4 cup brown sugar
1/4 cup sugar
1 (3.4 oz) package instant vanilla pudding
1 tsp vanilla
2 eggs
1 tsp baking soda
2 1/4 cups flour
1-2 cups chocolate chips
Directions: Preheat oven to 350 F. Mix flour and baking soda together. Set aside.
In a large bowl, cream butter and sugars together. Add in pudding package and beat until well blended. Add eggs and vanilla. Add flour mixture slowly until well incorporated. Add chocolate chips or other add-in.
Roll into 1 inch balls and place on greased baking sheet. Bake at 350 F for 8-12 minutes.

Until 20 seconds ago, I've never heard of pudding cookies. This sounds like I'm making this up but in this weeks grocery shopping I purchased choc chips to make cookies but I've just had a change of mind and will be printing out your kindly provided recipe with the intent purpose of using it. Thank you.

Thanks for all the great comments.
As for other pudding flavors, so far I've only used the vanilla pudding, but I'm definitely planning to try it with some other flavors! And Nikki from Chef in Training (the blogger I got the recipe from) also posted a version made with chocolate pudding that looked really good!
